@D01547-1@ of organic materials (e.g. starch, @S06088@, @P04898@, etc.) can be achieved by enzymic @D01547-2@, in which the enzyme converts a high molecular mass compound into lower molecular mass species. The process can be regarded as an example of enzymic degradation.
